REMEMBER THE COOKIE BUTTER BAR?
Back in 2017 the coffee-shop pastry case had a quiet legend: a cookie butter bar — a spiced speculoos cookie base under a thick cookie-butter layer and a swipe of cream cheese icing — that people grabbed with their morning latte and thought about for the rest of the day. Then it disappeared from the case for good. We rebuilt the whole thing in a jar: crunchy cookie butter cashew butter, cream cheese icing, and crunchy speculoos cookie pieces folded through every scoop.
